Pepper Jack Cornbread Cups
Ingredients
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1 large egg
- 1 cup milk
- 1/3 cup vegetable oil
- 1/2 cup shredded pepper jack cheese
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, cornmeal, sugar, salt, and baking powder. Add in the egg, milk, and vegetable oil and mix until smooth.
