Peanut Butter S’mores Cookies

Soft and chewy peanut butter cookies filled with chocolate chips and mini marshmallow bits. They have the classic flavors of s’mores combined with a classic peanut butter cookie. They make the perfect summer themed cookie that is quick and easy to bake.

The cookie dough is made like a classic peanut butte cookie dough, except with the addition of chocolate chips and mini marshmallow bits folded into the cookie dough. The cookies are placed onto a large ungreased baking sheet at least 2-inches apart and baked until they are fully cooked through. Let the cookies cool completely on cooling racks before serving.

Peanut Butter S'mores Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/2 cup marshmallow bits

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add the flour mixture in, and mix until it is fully combined. Fold in the chocolate chips and marshmallow bits.
  • Roll the cookie dough into balls, and place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
