Fluffy peanut butter pancakes baked in muffin form. These easy baked pancake muffins make the perfect easy on the go breakfast that everyone will love. It is made like a classic pancake batter, filled with tons of delicious peanut butter flavors. Serve warm with butter or syrup.

The batter is made like a classic pancake batter, except with the addition of peanut butter. Evenly divide the pancake batter between a paper lined muffin pan. Bake until each pancake muffin comes out clean with a toothpick.

Peanut Butter Pancake Muffins

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup peanut butter
  • 2 cups milk
  • 2 large eggs
  • 1/2 cup vegetable oil

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • Add in the peanut butter, milk, eggs, and vegetable oil until smooth. Evenly divide the batter between the paper liners. Bake for 15-20 minutes.
