Peanut Butter Oatmeal Cookie Bars

Soft and chewy peanut butter oatmeal cookies made in bar form. These quick and easy oatmeal cookie bars are filled with tons of peanut butter flavor. They have the same traditional chewy texture and delicious flavor or a classic oatmeal cookie. But making these cookies in bar form makes these cookies even easier, because there is no need to roll the cookie dough into balls or chill the dough. It is all pressed into a baking dish and baked. Then it is cut into bars for easy serving.

The dough is made like a mix of a classic peanut butter cookie, and a chewy oatmeal cookie. The butter is mixed with butter, peanut butter and both granulated and brown sugars. It is then combined with a mixture of flour and quick oats. Once the dough is prepared, press the cookie dough into a greased 8-inch square baking dish. Bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, mix butter with peanut butter, and both sugars until fluffy.
  • Add in egg and vanilla extract. Mix until smooth. Add in the flour mixture. Mix until a thick dough forms. Press the cookie dough into a greased 8-inch square baking dish. Bake for 15-20 minutes.
