Easy creamy cheesecake bars filled with delicious lemon flavors. These easy cheesecake bars are filled with lemon juice, and baked over a easy graham cracker crust. These easy cheesecake bars make the perfect easy treat to bake for any spring or summer themed occasion.

The graham cracker crust is made by mixing crushed graham crackers with melted butter. Press the mixture into a greased square baking dish. To make the cheesecake filling, cream cheese is mixed with all the remaining ingredients until smooth. Pour the mixture over the graham cracker crust. Bake until it is fully set. Chill in the fridge for at least 4 hours, or until serving.

Lemon Cheesecake Bars

Ingredients
  

  • 2 cups crushed graham crackers
  • 1/2 cup butter, melted
  • 16 oz. cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, mix together crushed graham crackers with melted butter until combined. Evenly press the mixture into a greased 8-inch square baking dish.
  • In a large bowl, mix together cream cheese with sugar, eggs, vanilla extract, and lemon juice until smooth. Pour the cheesecake mixture over the graham cracker crust. Bake for 45-50 minutes.
