Soft and chewy oatmeal cookies filled with tons of peanut butter and chocolate flavors. These easy cookies are perfect to bake for any holiday or occasion. Everyone will love the chewy oatmeal cookie texture, and the delicious flavors of peanut butter and chocolate chip flavors.

The cookie dough is made like a classic oatmeal cookie dough, except with the addition of peanut butter and chocolate chips mixed into the cookie dough. Roll the cookie dough into balls, and place each one onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Peanut Butter Chocolate Chip Oatmeal Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with peanut butter and both granulated and brown sugars until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips.
  • Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
