Peanut Butter Chocolate Chip Mini Cadbury Egg Cookie Bars

Soft and chewy peanut butter cookie bars filled with mini cadbury eggs and chocolate chips. These easy cookie bars make the perfect Easter or spring themed treat this year. Everyone will love the soft and chewy texture of the cookie bars and the delicious peanut butter and chocolate flavors.

The cookie dough is made similar to a classic peanut butter cookie dough, except for the addition of mini cadbury eggs and chocolate chips. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Peanut Butter Chocolate Chip Mini Cadbury Egg Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mini cadbury eggs
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and sugar until fluffy. Add in the egg and vanilla extract until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips and mini cadbury eggs. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
