Peanut butter balls are a delicious no-bake treat that is great to make for Christmas. These candies have one of the most favorite flavor combinations ever created, peanut butter and chocolate. With a sweet peanut butter dough covered in melted chocolate, these tasty candies are a classic Christmas time treat. They are also freezer friendly, so you can make these ahead of time so that they are ready to enjoy for the holidays.

The peanut butter dough is simple to make, in a large bowl beat softened butter with peanut butter until it is creamy. Add in vanilla extract, continue beating until combined. Then gradually add in the powdered sugar in 1/4 cup additions, beating after each addition until all of the sugar is incorporated. Roll the peanut butter dough into tablespoon sized balls and place them onto plates. Refrigerate for at least 30 minutes.

To make the chocolate coating, place the chocolate chips into a microwaveable bowl and melt the chocolate in 30 second intervals, stirring in between each one until the chocolate is completely melted and smooth. Remove the peanut butter balls from the fridge and dip each one into the melted chocolate. Place them back onto plates and refrigerate for another 30-60 minutes, until the chocolate has set. Store the peanut butter balls into an air tight container in the fridge for up to two weeks, or in the freezer for up to 3 months.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 1/2 cups peanut butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 oz. chocolate chips

Instructions
 

  • In a large bowl with either a hand or stand mixer, beat softened butter with peanut butter until smooth and creamy.
  • Add in vanilla extract and beat until smooth. Add in the powdered sugar 4 separate additions, until all of the sugar is fully incorporated. Roll the peanut butter dough into small tablespoon sized balls and place onto plates.
  • Refrigerate for 30 minutes. Place the chocolate chips into a microwaveable bowl and melt in the microwave in 30 second intervals, stirring in between each one until the chocolate is fully melted.
  • Remove the peanut butter balls from the fridge and using a fork, dip each peanut butter ball into the melted chocolate and place it back onto a plate.
  • Refrigerate for another 30-60 minutes, or until the chocolate has set. Store the peanut butter balls into an air tight container in the fridge for up to one week, or store in the freezer for up to a couple of months.
