Peas with mayo and bacon makes a great classic potluck salad that is great to take to summer barbecues and potlucks. It is best served cold, making it the perfect summer side dish because there is no need to heat the house up. Peas with mayo and bacon are a great combination to make a tasty summer salad that everyone will love. This dish also works for holiday meals, like Easter because this salad has a warm spring feel to it.

Frozen peas are cooked according to the package directions, and mixed with mayo, diced red onion and cooked crumbled bacon. I used leftover bacon that I had and crumbled it into the salad, although you can also use store bought bacon bits instead. For a more cheesy dish, you can add either shredded cheddar cheese or cubed cheese. This is a quick and easy side dish that can either be served at a potluck or as a cool summer side dish. You can make this dish ahead of time and keep it refrigerated until ready to serve or for up to one week.

Ingredients
  

  • 1 ( 16 oz.) package frozen peas
  • 1/2 cup mayonnaise
  • 1/2 cup diced red onion
  • 1/2 cup crumbled bacon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder

Instructions
 

  • Cook peas according to package directions, drain and place into a medium bowl.
  • Mix with mayonnaise, diced red onion, crumbled bacon, salt, pepper and garlic powder.
  • Cover and refrigerate until ready to serve, or for up to one week.
