Corn on the cob is a simple and easy side dish. There are a couple of ways that you can cook it, boiling, grilling or my favorite way is to roast the corn in the oven. Roasting the corn on the cob in the oven cooks it to perfectly tender. Only two ingredients are needed to make this, and you season it any way that you want. This corn is a quick and easy side dish that takes very little prep work and is ready in 4o minutes. It goes great with a quick weeknight meal.
I used frozen ears of corn on the cob, but you can also use fresh ears of corn with the husks removed. The ears of corn are cooked wrapped in foil, so that the corn cooks tender without burning the corn kernels. Place each each of corn onto a piece of foil and pour 1/2 tablespoon melted butter over each corn. Wrap the corn in foil and place onto a baking sheet and roast in the oven for 35-40 minutes. Until the corn is tender, season it with salt and pepper to your taste and serve.
