Oven-Roasted Chili Lime Corn on the Cob

Easy and delicious corn on the cob roasted in the oven and seasoned with a delicious chili lime coating. You only need six simple ingredients to make this easy roasted corn on the cob. It is slightly spicy with a delicious chili lime flavor. You can even use any type of corn for this, like fresh or frozen ears of corn. You can make this easy side dish to go with any meal, it doesn’t require a lot of hands-on prep work. Make this corn the next time you want an easy and delicious side dish.

For the corn, you can use fresh or frozen corn, I used frozen for this recipe. To make the spicy chili lime coating, olive oil is mixed with lime juice and some seasonings. Brush the oil mixture over each ear of corn and wrap in foil. Place them onto a baking sheet and bake until they are heated through. 

 

Oven-Roasted Chili Lime Corn on the Cob

Ingredients
  

  • 4 ears corn on the cob
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon chili powder

Instructions
 

  • Preheat oven to 400 F. In a small bowl, combine olive oil, lime juice, salt, pepper, and chili powder. Brush mixture over each corn on the cob.
  • Wrap each corn on the cob in foil. Bake for 35-40 minutes.
