Oreo Stuffed Earth Day Cookies

Soft and chewy sugar cookies, made to look like the earth, and stuffed with Oreo cookies. The cookie dough is made with a classic sugar cookie dough that is colored green and blue. Chocolate Oreo cookies are then stuffed in each cookie. These easy cookies are perfect to bake for a fun earth day treat that the whole family will love baking together.

The cookie dough is made like a classic sugar cookie dough, then it is divided into two bowls, one is colored with the blue food coloring, and the other is colored with green food coloring. Take a piece of each color of cookie dough, and roll them together into a ball. Flatten each ball, and place one Oreo cookie on each piece of dough, roll the cookie dough into a ball, covering the Oreo cookie completely. Place onto a large baking sheet, and bake until the cookies are fully cooked through.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • green food coloring
  • blue food coloring
  • Oreo cookies

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  2. Add in the flour mixture, mix until it is fully combined. Divide the cookie dough into two bowls. Color one half blue and the other half green. Take a piece of both colors of dough, and roll them together in a ball. Flatten slightly, and place one Oreo cookie on the dough.
  3. Roll into a ball, covering the Oreo cookie completely. Place the cookies onto a large ungresaed baking sheet at least 2-inches apart. Bake for 10-12 minutes.
