Mini blondie cups filled with crushed chocolate Oreo cookies. These quick and easy blondie cups make the perfect easy dessert for any occasion. Everyone will love the soft and fluffy texture of the cups and delicious chocolate Oreo flavors.

The blondie batter is made by whisking all of the ingredients together in a large bowl until smooth. Then fold crushed Oreo cookies into the batter. Evenly divide the blondie batter between a paper lined muffin pan. Bake until each cup comes out clean with a toothpick.

Ingredients
  

  • 1 cup butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup crushed Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together melted butter, brown sugar, eggs, and vanilla extract until smooth.
  • Add in the flour, salt, and baking powder, mix until smooth. Fold in the crushed Oreo cookies. Evenly divide the batter between the paper liners. Bake for 12-15 minutes.
