Mint Oreo Cookie Cups

Soft and chewy cookie cups filled with tons of delicious mint flavor, and chocolate Oreo cookies. These easy cookie cups make the perfect easy dessert to bake this St. Patrick’s day that everyone will love. The cookie cups are soft and chewy, and the mint and chocolate Oreo flavors go perfectly together.

The cookie dough is started out like a classic sugar cookie dough, except that instead of vanilla extract, mint extract is used. Green food coloring is also added to make the dough green, and crushed Oreo cookies are folded into the cookie dough. Evenly divide the cookie dough between a lined muffin pan. Bake until each cookie cup comes out clean with a toothpick.

Mint Oreo Cookie Cups

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1/2 cup crushed Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and mint extract until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring, and mix until it is fully green. Fold in the crushed Oreo cookies.
  • Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
