The brownie batter is made like a classic brownie batter. Then place one mint Oreo cookie in a paper lined muffin pan. Pour brownie batter over the Oreo cookies and bake until the center of each cup comes out clean with a toothpick. Let cool completely before serving.
Mint Oreo Brownie Cups
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 large eggs
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter, and vanilla extract until smooth.
- Place one mint Oreo cookie in each paper liner. Evenly divide the brownie batter between the paper liners. Bake for 15-20 minutes.
