Soft and chewy oatmeal cookies combined with a classic delicious mint chocolate chip cookie. These easy mint chocolate chip oatmeal cookies has the chewy texture of a classic oatmeal cookie, but all of the flavor of a classic mint chocolate chip cookie. These cookies make a fun treat to bake this St. Patrick’s day treat as a easy non traditional cookie that everyone will love.

The cookie dough is started like a classic oatmeal cookie dough, then mint flavoring and green food coloring is added into the dough. Chocolate chips are also folded into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet. Bake until the cookies are fully cooked through. Let cool completely on a cooling rack before serving.

Mint Chocolate Chip Oatmeal Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and mint extract and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Add in the green food coloring, and mix until it is fully green. Fold in the chocolate chips.
  • Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
