Soft and chewy oatmeal cookies combined with a classic delicious mint chocolate chip cookie. These easy mint chocolate chip oatmeal cookies has the chewy texture of a classic oatmeal cookie, but all of the flavor of a classic mint chocolate chip cookie. These cookies make a fun treat to bake this St. Patrick’s day treat as a easy non traditional cookie that everyone will love.

The cookie dough is started like a classic oatmeal cookie dough, then mint flavoring and green food coloring is added into the dough. Chocolate chips are also folded into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet. Bake until the cookies are fully cooked through. Let cool completely on a cooling rack before serving.

Mint Chocolate Chip Oatmeal Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips

Method
 

  1. Preheat the oven to 350 F. In medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and mint extract and mix until smooth.
  2. Add in the flour mixture, mix until it is fully combined. Add in the green food coloring, and mix until it is fully green. Fold in the chocolate chips.
  3. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
