Mint flavor combined with chocolate chips makes the perfect flavor combination for cookies. They are similar to classic chocolate chip cookies, except instead of vanilla extract, mint extract is used. And green food coloring is added makes these cookies perfect for St. Patricks day. These also make great Christmas cookies with the mint flavor. Make these tasty classic cookies for a fun treat to enjoy on St. Patricks day or Christmas.

To make the cookie dough, it is made similar to classic chocolate chip cookies using both granulated sugar and brown sugar. Mint extract is used, and the cookie dough is dyed green. Chocolate chips are folded into the cookie dough and the cookie dough is then refrigerated for at least one hour. The cookie dough is refrigerated because it will help the cookie dough not spread out as much when it bakes. Once the cookie dough has chilled, roll it into balls using either your hands, or a cookie scoop. Place the cookie dough 2-inches apart onto ungreased baking sheets. Bake until the bottoms of the cookies are lightly browned.

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon mint extract
  • green food coloring
  • 1 ( 12 oz.) bag chocolate chips

Instructions
 

  • In a medium bowl, whisk together flour, salt and baking soda. In a large bowl using either a hand or a stand mixer, beat softened butter with both granulated and brown sugar until light and fluffy.
  • Add in eggs, mint extract and green food coloring, beat until smooth. Add flour mixture in three separate additions, beating after each addition until fully incorporated.
  • Fold in chocolate chips. Cover and refrigerate for at least 1 hour. Preheat oven to 350 F. Roll cookie dough into balls and place 2-inches apart onto ungreased baking sheets.
  • Bake for 10-12 minutes.
