Mint Chocolate Chip Buttercream Truffles

Easy and creamy mint buttercream truffles filled with delicious mint flavors, and chocolate chips. All covered in melted chocolate. These easy buttercream truffles have all of the classic flavors of mint chocolate chip. Everyone will love these easy candies for St. Patrick’s day or any other occasion.

To make the buttercream mixture, butter is mixed with powdered sugar and mint extract until it is fully combined. Add in the green food coloring until it is fully green. Fold in the chocolate chips. Roll the mixture into balls, and freeze while you melt the remaining chocolate. Melt the chocolate chips in the microwave until it is fully melted and smooth. Fully coat each truffle into the melted chocolate. Set onto a large plate, and let sit until the chocolate has completely set.

Mint Chocolate Chip Buttercream Truffles

Ingredients
  

  • 1/2 cup butter, softened
  • 2-3 cups powdered sugar
  • 1 teaspoon mint extract
  • green food coloring
  • 1/2 cup chocolate chips
  • 12 oz. chocolate chips

Instructions
 

  • In a large bowl using a mixer, beat butter with powdered sugar and mint extract until smooth. Add in the green food coloring, and mix until it is fully green.
  • Fold in the chocolate chips. Roll the mixture into balls, and place onto a plate. Freeze for at least 20 minutes.
  • Place the chocolate chips into a microwave-safe bowl, and heat in the microwave in 30 second intervals, stirring well until it is fully melted and smooth. Fully coat each truffle into the melted chocolate. Set them back onto plates, and let sit until the chocolate has completely set.
