Mint and chocolate is the perfect flavor combination for any time of the year. But especially around St. Patricks day. These mint chocolate brownie bites taste just like classic chewy brownies with a mint flavor. Sprinkled with green sprinkles or green colored sugar to make this treat a fun St. Patricks day treat. These brownie bites are baked in a cupcake pan, making them great for serving individual servings of these tasty brownies.

The brownie batter is made like a regular brownie batter, but baked in a cupcake pan. After the brownies are baked, let them cool completely before storing in an airtight container in the refrigerator for up to one week. Once the brownie bites are cooled, you can sprinkle some green sprinkles or green colored sugar for St. Patricks day. These are great for any and every holiday, from Christmas to St. Patricks day they make a simple and quick dessert.

Mint Chocolate Brownie Bites

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon mint extract
  • green sprinkles

Instructions
 

  • Preheat oven to 350 F. Prepare a muffin pan with cupcake liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt and baking powder.
  • Add in eggs, vegetable oil, milk and mint extract. Whisk until smooth. Divide the brownie batter between the prepared cupcake liners. Bake for 20-25 minutes. Let cool completely. Sprinkle with green sprinkles.
