Mint Brownie Truffles

Chocolate fudge brownie truffles covered in melted chocolate. These brownie truffles are delicious with peppermint flavoring added to the brownies. Brownies are baked and crumbled into a large bowl, and mixed with frosting. Then formed into balls and covered with melted chocolate. These brownie truffles make a great easy treat for any holiday or occasion.

The brownie mixture is quick and easy to make, because all of the ingredients are whisked together in the same mixing bowl. You can also use a premade brownie mix and add in peppermint extract to it if you prefer. Bake the brownies as usual, then let them cool completely before crumbling them into a large bowl. A can of chocolate frosting is mixed into the brownies, and formed into bite-sized balls. Set onto plates, and refrigerate while you melt the chocolate chips in the microwave until it is fully melted and smooth. Using a fork, fully coat each brownie truffle into the melted chocolate, and set onto plates. Let the chocolate set completely before serving.

Mint Brownie Truffles

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon peppermint extract
  • 1 ( 15 oz.) can chocolate frosting
  • 12 oz. chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and peppermint extract, whisk until smooth.
  • Pour the brownie batter into a greased 8-inch square baking dish. Bake for 20-25 minutes. Let cool completely. Crumble the brownies into a large bowl, and mix with the chocolate frosting.
  • Roll the brownie mixture into balls and set onto plates. Refrigerate for at least 20 minutes. Place the chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well after each interval until it is completely melted and smooth.
  • Using a fork, fully coat each brownie truffle into the melted chocolate. Set back onto plates, and refrigerate until the chocolate has completely set.
