A classic creamy cheesecake combined with the classic flavors of s’mores, these mini s’mores cheesecake bites are the perfect summer treat. Classic cheesecakes are baked over a graham cracker crusts in muffin cups to make mini cheesecake bites. They are topped with chocolate and mini marshmallows to create the classic s’mores flavor. You can make these mini cheesecakes as a fun summer treat.
To make the classic graham cracker crust for the cheesecakes, crushed graham crackers and melted butter are combined. Evenly divide the graham cracker crusts into each muffin cup and press to form the crust. To make the classic cheesecake batter, softened cream cheese is beat with sugar until light and fluffy. Add in eggs and vanilla extract, until the batter is smooth. Pour the batter over each graham cracker crust. Using a cookie scoop works well to evenly distribute the cheesecake into each muffin cup. Bake the cheesecakes for 30 minutes, remove from the oven and top each with half of one of the the chocolate bars. Place three mini marshmallows on top and bake for a couple more minutes, just until the chocolate is melted. Let cool completely.
Mini S'mores Cheesecakes
Ingredients
- 1 cup crushed graham cracker crumbs
- 4 tablespoons melted butter
- 2 ( 8 oz.) packages cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 6 snack size chocolate bars
- 36 mini marshmallows
Instructions
- Preheat oven to 350 F. Line a 12 cup muffin tin with paper liners. In a small bowl, combine crushed graham crackers with melted butter. Press the mixture evenly into each paper liner.
- In a large bowl with a mixer, beat softened cream cheese with granulated sugar until fluffy. Add in eggs and vanilla extract and beat until smooth. Divide the cheesecake batter between each muffin cup.
- Bake for 25-30 minutes. Divide each chocolate bar in half and place each half onto the cheesecakes. Place 3 mini marshmallows on each cheesecake and bake for another 3-4 minutes. Let cool completely.
