Deviled Egg Macaroni Salad

This pasta salad is creamy and delicious with all of the tastes of a classic deviled egg filling. Macaroni with boiled eggs and mayonnaise will make the macaroni salad the perfect picnic or summer time dish. This dish is also great for a make ahead dish. Because you can make it up to a day ahead of time. Make this creamy pasta to go along with your favorite summer meal like grilled chicken or serve it with hot dogs or hamburgers.

Cook the pasta according to the package directions, drain and then rinse the pasta with cold water to stop the cooking process. Then drain the pasta again, place the pasta into a large bowl along with chopped hard boiled eggs, mayonnaise, mustard, pickle slices and a sprinkle of paprika. It will taste just like the filling for deviled eggs, especially with the paprika added to the pasta. You can serve this pasta right away, but it is best served after it has been refrigerated for at least one hour. You can make the pasta up to a day ahead of time.

Ingredients
  

  • 12 oz. elbow pasta
  • 6 hard boiled eggs, chopped
  • 1 cup mayonnaise
  • 2 teaspoons mustard
  • 1/2 cup sliced pickle slices
  • 1/2 teaspoon paprika

Instructions
 

  • Cook pasta according to package directions, drain and rinse with cold water. Mix the pasta with chopped hard boiled eggs, mayonnaise, mustard, pickle slices and sprinkle with paprika.
  • Cover and refrigerate for least one hour, or until serving.
