Quick and easy delicious Mediterranean bean salad filled with chickpeas, kidney beans, tomatoes, cucumber, and feta cheese. It is so quick and easy to prepare this salad and goes great with just about any main meal. No cooking is required for this salad, all you need to do is combine all of the ingredients together in a bowl. The dressing is so easy to make with only three simple ingredients. You can easily make this salad ahead of time and store in the fridge until you are ready to serve.

This salad is quick and easy to prepare, you only need 10 minutes from start to finish. Chickpeas, kidney beans, tomatoes, cucumber, bell pepper, and feta cheese are all combined together. To make the dressing, balsamic vinegar is mixed with olive oil and Italian seasoning. Mix the dressing with the salad and serve or refrigerate until serving.

Ingredients
  

  • 1 ( 15 oz.) can chickpeas, drained
  • 1 ( 15 oz.) can kidney beans, drained
  • 1/2 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1 green bell pepper, diced
  • 1/2 cup feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Italian seasoning

Instructions
 

  • In a large bowl, combine chickpeas, kidney beans, cherry tomatoes, cucumber, green pepper, and feta cheese.
  • In a small bowl, combine olive oil, balsamic vinegar, and Italian seasoning. Mix dressing with salad. Cover and refrigerate until serving.
