Macaroni and tomatoes are a classic southern meal or side dish. Is is so quick and simple to make with just pasta, butter or bacon grease, a can of diced tomatoes and some salt and pepper to season. This pasta is ready in less than 15 minutes and you can enjoy it for either a quick vegetarian lunch or dinner, or you can serve it as an easy tasty side dish that goes along with any meal. to make this dish vegetarian, instead of using bacon fat you can use butter. This can easily be made gluten-free by replacing regular pasta with a gluten-free based pasta instead.
For this pasta, I used elbow pasta but any small shaped pasta will work well with this dish. Bacon grease is traditionally used for this, but if you do not have any bacon grease on hand you can use butter instead. Heat the butter or bacon grease in a medium saucepan over medium heat. Add a can of undrained diced tomatoes along with the juices to the saucepan and salt and pepper. Continue to cook the mixture for a minute to let the tomatoes heat through. Mix the tomato mixture with the cooked pasta and serve.

Ingredients
- 2 cups elbow pasta
- 2 tablespoons butter or bacon grease
- 1 ( 14 oz.) can diced tomatoes, with juices
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Cook pasta according to package directions, drain and place pasta into a large bowl.
- In a medium saucepan over medium heat, melt butter or bacon grease. Add in tomatoes along with the juices, salt and pepper. Cook for a minute to heat through. Mix with pasta.
