Because red potatoes are used instead of russet potatoes, you won’t need to peel them, just halve them and place into a large saucepan with water. Let the potatoes simmer until they are fork tender. Drain and mash with the butter, sour cream, salt, and pepper. Spread the mashed potatoes out into a greased baking dish. Top with shredded cheddar cheese and crispy cooked and crumbled bacon. Bake until the cheese has fully melted.
Loaded Red Potato Casserole
Ingredients
- 2 pounds red potatoes, halved
- 1/4 cup butter
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
Instructions
- Preheat oven to 350 F. Place red potatoes into a saucepan over medium heat, cover with water, let simmer until fork tender. Drain and mash potatoes with butter, sour cream, salt, and pepper.
- Spread potatoes into a greased baking dish. Top with cheese and bacon. Bake for 20-25 minutes.
