The potato salad is made with boiled potatoes, mayonnaise, sour cream, and mustard. Diced onion is added to the salad along with crispy bacon, shredded cheddar cheese, and seasoned with salt, and pepper. You can either serve right away, or you can cover and refrigerate until you are ready to serve.
Loaded Baked Potato Salad
Ingredients
- 2 pounds russet potatoes, peeled and diced
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 teaspoon mustard
- 1/2 onion, diced
- 1/2 cup cooked and crumbled bacon
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Place potatoes into a large saucepan. Cover with water and bring to a boil over medium heat. Cook until the potatoes are fork tender. Drain and place into a large bowl.
- Mix the potatoes with the remaining ingredients. Cover and refrigerate until serving.
