Lemon Cake Mix Chocolate Chip Butterscotch Crinkle Cookies

Easy soft and chewy cookies made with a box of lemon cake mix and filled with chocolate chips and butterscotch baking chips. They are also rolled in powdered sugar before baking, making them more soft and chewy and gives them a crinkle look. Everyone will love these easy chewy lemon cookies for any occasion.

The cookie dough is made by mixing a box of lemon cake mix with eggs and vegetable oil until smooth. Fold chocolate chips and butterscotch baking chips into the cookie dough. Roll the cookie dough into balls, and roll each one into a dish of powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 (15 oz.) box lemon cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup chocolate chips
  • 1 cup butterscotch baking chips
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the chocolate chips and butterscotch baking chips.
  • Place the powdered sugar into a shallow dish. Roll the cookie dough into balls, and roll each one into the powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
