I love cheesy spicy queso that I get at restaurants, but most quesos are made using processed cheese. I wanted to create a cheesy and spicy queso using real cheese, cheddar cheese and montery jack cheese. Two types of cheeses are used to create this dip, along with canned diced tomatoes and a can of green chilies. Just simple ingredients, nothing processed. You can serve this cheesy dip as a game day appetizer or as a side dish to tacos or enchiladas. Serve with your favorite tortilla chips.
The queso is pretty easy to make and takes less than 15 minutes. Start by melting butter in a large saucepan. Cook minced garlic until fragrant. Then add flour and cook it for a minute to create a roux, which will help thicken the sauce. Add milk, both cheeses, diced tomatoes, green chilies and the seasonings. It is seasoned with salt, pepper, chili powder and paprika. Although for a less spicy dip you can reduce the amount of paprika and chili powder. Let the queso continue to cook over medium heat, while whisking constantly until the cheeses are melted and the sauce has thickened. You can make this queso ahead of time because it heats up well in the microwave.
Homemade Queso
Ingredients
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon chili powder
- 1 ( 15 oz.) can diced tomatoes
- 1 ( 2 oz.) can green chilies
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded monterey jack cheese
Instructions
- In a large saucepan over medium heat, melt butter. Add minced garlic and cook until fragrant. Add in flour and cook for a minute to brown.
- Add milk, salt, chili powder, diced tomatoes with juices, green chilies and both cheeses.
- Let cook over medium heat, whisking constantly until cheese is completely melted and the sauce has thickened.
