Homemade Nutter Butter Cookies

Homemade classic nutter butter cookies using chewy homemade peanut butter cookies with a creamy and sweet peanut butter filling. These homemade cookies are sweet and delicious. The peanut butter cookies are soft and chewy, they are sandwiched together between a creamy sweet peanut butter filling made with peanut butter and powdered sugar. You can store the filled cookies in an airtight container in the fridge.

The cookies dough is made just like classic peanut butter cookie dough. If you would rather, you could even use a premade peanut butter cookie dough instead. And shape them into log shapes. After the cookies have baked, let them cool completely before filling them with the sweet peanut butter filling. To make the peanut butter filling, beat softened butter with peanut butter, powdered sugar, milk, and vanilla extract until smooth and creamy. Evenly spread the filling onto half of the peanut butter cookies. Sandwich the cookies together with the remaining cookies.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Ingredients for Peanut Butter Filling

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 3-4 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions
 

  • In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl with a mixer, beat softened butter and peanut butter together until creamy. Add in both sugars, beat until fluffy.
  • Add in egg and vanilla extract, beat until smooth. Add the flour mixture in three parts, beating well after each until fully combined. Refrigerate dough for at least one hour. Preheat oven to 350 F. Roll cookie dough into logs, place 2-inches apart on ungreased baking sheets.
  • Flatten slightly and press with a fork in a criss cross pattern, pinch the middles together. Bake for 10-12 minutes. Let cool completely.
  • In a large bowl with a mixer, beat softened butter with peanut butter until creamy. Add in powdered sugar, milk, and vanilla extract, beating until smooth. Place the peanut butter filling onto half of the peanut butter cookies. Sandwich with another cookie.
