It is the start of football season, what better way to start the game day appetizers than this cheesy homemade nacho cheese sauce. It is creamy and cheesy using only simple ingredients and nothing fancy. Just a simple cheddar cheese sauce seasoned with a little bit of spice. No processed cheese is needed, just classic shredded cheddar cheese. The creamy sauce makes the perfect dip for game day. The sauce is best served warm with your favorite tortilla chips. This sauce also tastes great when it is used to make cheesy nachos, covering tortilla chips.
To start the nacho cheese sauce, melted butter is whisked with flour to create a roux which will help the sauce thicken. Milk, shredded cheddar cheese, salt, pepper, ground cumin and paprika are added. Continue to cook the sauce while whisking consistently until the cheese is fully melted and the sauce has thickened. The ground cumin and paprika are the key to making this sauce taste like a nacho cheese sauce. They make it a little spicy, but not too overpowering.
