English muffins are a great breakfast served toasted with butter or jelly. There are so many things that you can make with english muffins instead of the traditional breakfast. You can make them into mini english muffin pizzas or you can make a tasty breakfast sandwich. Instead of having to go to the store to get the english muffins, they can easily be made at home with a simple yeast dough.

The yeast dough is easy to make, but it will need about 1-2 hours to allow the dough to rise before cooking. To make the yeast dough, active dry yeast will first need to activated in some warm water along with sugar. Let the mixture sit for 10 minutes to allow the yeast to activate. Combine flour and salt in a large bowl and mix with the yeast mixture, warm milk and melted butter. Knead the dough on a floured surface until the dough is smooth. Place the dough into a large bowl that has been greased with cooking spray. Cover and let the dough rise for 1-2 hours or until it has doubled in size.

Once the dough has risen, deflate it and form it into 16 equal sized pieces. Flatten each piece into an english muffin shape. Heat a large lightly greased skillet or griddle over medium heat and sprinkle with cornmeal. Cook the english muffins for a couple of minutes on each side, just until golden browned. Place the english muffins on a baking sheet and bake for 10-12 minutes until they are fully cooked through.

Ingredients
  

  • 1 cup warm water
  • 1 teaspoon granulated sugar
  • 2 1/2 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup warm milk
  • 2 tablespoons melted butter
  • cornmeal

Instructions
 

  • In a large measuring cup, whisk together water, sugar and yeast. Let sit for 10 minutes. In a large bowl, combine flour and salt.
  • Pour in yeast mixture, warm milk and melted butter. Mix until a dough forms. Knead dough on a floured surface and knead until smooth. Place dough into a large greased bowl, cover and let rise in a warm place for 1-2 hours.
  • Preheat oven to 350 F. Deflate dough and divide into 16 equal sized pieces. Flatten each piece and set aside. Heat a large skillet or griddle over medium heat and sprinkle with cornmeal.
  • Place english muffins on the hot skillet and let cook until lightly browned, flip and cook the other side until lightly browned. Place muffins onto a lightly greased baking sheet and bake for 10-12 minutes.
