Halloween sugar cookies dyed green and topped with candy eyes make these cookies a fun dessert for the holiday. The cookies are a soft and chewy sugar cookie that is so quick and simple to make. The added candy eyes to the cookies make these cookies a fun Halloween themed dessert. This cookie dough is also freezer friendly, before baking you can roll the dough into balls and store them in a freezer safe plastic bag. The cookie dough will stay good in the freezer for up to two months.

The cookie dough is made like a classic sugar cookie dough. Green food coloring is added to the cookie dough, mixing until the dough is fully green. Cover and refrigerate the cookie dough for at least one hour. Refrigerating the dough helps keep the cookie dough from spreading out too much in the oven. After the dough has chilled, roll it into balls and place 2-inches apart onto ungreased baking sheets. Bake the cookies for 10-12 minutes. Once the cookies have come out of the oven, place the candy eyes onto each cookies. Let cool completely on cookie racks.

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • green food coloring
  • candy eyes

Instructions
 

  • In a medium bowl, whisk together flour, salt and baking soda. In a large bowl using either a hand or stand mixer, beat softened butter and sugar together until fluffy.
  • Add in eggs and vanilla extract, beat until smooth. Add the flour mixture in three separate additions, beating after each until the flour mixture is fully incorporated. Mix in green food coloring until fully green. Cover and refrigerate for at least one hour.
  • Preheat oven to 350 F. Roll cookie dough into balls and place 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes. Place the candy eyes onto each cookie after removing from oven.
