Grinch Cookie Cake

Soft and chewy peppermint flavored cookie cake filled with M&Ms, this delicious and sweet cookie cake is perfect for baking during the holidays. It is colored green for the Grinch, and filled with red and green M&Ms. It is a fun and delicious dessert that the whole family will love. Serve topped with whipped cream, or your favorite frosting.

The dough for this cookie cake is similar to making a classic sugar cookie dough. The only thing that is changed, is that instead of vanilla extract, peppermint extract is used. And green food coloring is added to the dough to make it green for the Grinch. Red and green M&Ms are also added to the cookie dough. Press the dough into a greased round cake pan, and bake until it comes out clean in the center with a toothpick. Let cool completely before serving.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon peppermint extract
  • green food coloring
  • 1 cup red and green M&Ms

Instructions
 

  • Preheat the oven to 350 F. In a small bowl, whisk together flour, salt, and baking soda. In an large bowl, combine softened butter with sugar until fluffy.
  • Add in egg and peppermint extract, mix until smooth. Add the flour mixture in and mix until a thick dough forms. Add in food coloring, mix until fully green.
  • Fold in M&Ms. Press the cookie dough into a greased round 9-inch cake pan. Bake for 20-25 minutes.
