Gingerbread Brookies

Brookies are a cross between brownies and cookies. They combine the soft chocolate brownie, with a soft and chewy cookie. For these brookies, gingerbread cookie dough is baked over a classic brownie batter. These brookies are soft and delicious. They have the delicious chocolate flavor from the brownies, and the warm gingerbread spices from the cookie dough. They make the perfect Christmas treat that everyone will love.

For the gingerbread cookie dough, you can either make your own homemade gingerbread cookie dough, or you can also use a premade gingerbread cookie dough instead. For the brownie batter to save on time, you can also use a box of brownie mix and prepare it according to package directions. Pour the brownie batter into a baking dish first, then evenly spread the prepared cookie dough over the batter, and bake until the center of the brookie comes out clean with a toothpick. Let cool completely before cutting into bars.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and cloves. In a large bowl, combine butter with granulated and brown sugar, and molasses. Mix until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until fully combined. Set aside.
  • In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract, and whisk until smooth. Pour the brownie batter into a greased 8-inch square baking dish.
  • Evenly spread the gingerbread cookie dough over the brownie batter. Bake for 25-30 minutes.
