Gingerbread Blondie Cups
Ingredients
- 1 cup butter, melted
- 1 cup brown sugar
- 2 large eggs
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together butter, brown sugar, eggs, molasses, and vanilla extract until smooth. Add in flour, salt, baking powder, cinnamon and ginger and mix until combined.
- Evenly divide the mixture between the prepared muffin pan. Bake for 12-15 minutes.
