Classic buttery shortbread cookies filled with molasses and gingerbread spices. They have the texture of a buttery shortbread cookie and all of the flavors of a classic gingerbread cookie. These gingerbread shortbread cookies make a delicious Christmas or winter themed dessert that everyone will love.

The cookie dough is made similar to a classic shortbread cookie, with the addition of molasses, cinnamon, ginger, and ground cloves. The cookie dough is rolled into balls, then they are flatten slightly and baked until the bottoms are lightly browned. Let these cookies cool completely on a cooling rack before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with powdered sugar until fluffy. Add in the molasses and vanilla extract, and mix until smooth.
  • Add in the flour, cinnamon, ginger, and cloves. Mix until it is fully combined.
  • Roll the cookie dough into balls, and flatten each one slightly. Place the cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
