Fluffy and sweet homemade vanilla cupcakes for Halloween. These easy cupcakes are frosted with a delicious creamy vanilla buttercream frosting, and decorated with chocolate chips to look like a ghost. It is so quick and easy to make these simple cupcakes, they would be perfect for a fun Halloween themed party or occasion.

The cupcake batter is made like a classic vanilla cupcake batter. It is divided between a 12 cup muffin pan, and baked until the center of each cupcake comes out clean with a toothpick. Let the cupcakes cool completely on a cooling rack before frosting and decorating. The frosting is easy to make, all of the ingredients are mixed together until fluffy. Frost each cooled cupcake, then decorate with the chocolate chips to make them look like a ghost.

Ghost Cupcakes

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Ingredients for Vanilla Buttercream Frosting

  • 1/2 cup butter, softened
  • 2-3 cups powdered sugar
  • 2-4 tablespoons milk
  • 1 teaspoon vanilla extract
  • chocolate chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, salt, and baking powder. Add in milk, vegetable oil, eggs, and vanilla extract, whisk until smooth.
  • Evenly divide the cupcake batter between the prepared muffin pan. Bake for 15-18 minutes. Let cool completely before frosting.
  • In a large bowl, mix butter with powdered sugar, milk, and vanilla extract until smooth. Frost cupcakes, decorate with chocolate chips to look like a ghost.
