The cookie dough is started out like a classic sugar cookie dough, then sprinkles are folded into the cookie dough. Roll the dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Let the cookies cool completely before adding the filling. Divide the filling between half of the cookies. Sandwich with the remaining half of cookies.

- In a large bowl, combine all of the filling ingredients until fluffy. Place the filling onto half of the cookies, sandwich with the remaining cookies.
