Fried cornbread is a classic southern-style dish that pairs well with just about any meal. I like to serve it as a side to go along with chicken or pork chops. The cornbread is pan-fried, just like a pancake, and served warm with butter, just as you would top on a classic slice of cornbread. You only need six easy ingredients and a large bowl to make these tasty fried cornbread patties. Flour, cornmeal, salt, baking powder, egg, and vegetable oil are all whisked together until smooth. Ladle batches of the cornbread batter onto a hot skillet or griddle and cook just as you would make pancakes, flipping once until both sides are golden browned. Serve warm with butter.

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 large egg
  • 1/3 cup vegetable oil

Instructions
 

  • In a large bowl, whisk together flour, cornmeal, salt, and baking powder. Whisk in egg and vegetable oil until smooth.
  • Heat either a skillet or griddle with non-stick cooking spray. Ladle cornbread batter onto the hot skillet and cook until golden browned on both sides.
