Easy no bake red velvet cookie dough truffles, decorated with candy eyes for a fun Halloween treat. These easy cookie dough truffles are made with a edible red velvet cookie dough that is covered in melted white chocolate. They are easy to make, and no baking is needed to make them, just a microwave. They are great for a fun Halloween themed dessert.

The cookie dough is made by first heating the flour and cocoa powder in the microwave for about 40 seconds. It is then mixed with a mixture of butter, sugar, vanilla extract, and milk until a thick dough forms. Add in the red food coloring, and mix until it is fully red. Roll the cookie dough into balls, and place them onto a plate, refrigerate them while you melt the chocolate chips. Melt the chocolate chips in the microwave in 30-second intervals, stirring well until it is fully melted and smooth. Fully coat each truffle into the melted chocolate. Set them onto a plate, and place one candy eye on each truffle. Let them sit until the chocolate has completely set.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk
  • red food coloring
  • 12 oz. white chocolate chips
  • candy eyes

Instructions
 

  • Place the flour and cocoa powder into a microwave-safe bowl, and heat in the microwave for about 40 seconds. In a large bowl, combine butter with sugar until fluffy. Add in vanilla extract and milk, mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Add in the red food coloring, and milk until it is fully red. Roll the cookie dough into balls, and place them onto a plate. Refrigerate for at least 20 minutes.
  • Place the chocolate chips in a microwave-safe dish, and heat in the microwave in 30 second intervals, stirring well until it is fully melted and smooth.
  • Use a fork to fully coat each truffle into the melted chocolate. Set back onto plates, and place one candy eye on each truffle. Let sit until the chocolate has completely set.
