The cupcake batter is quick and easy to make, all of the ingredients are whisked together in a large bowl until smooth. Divide the cupcake batter between a paper lined muffin pan. Bake until each cupcake comes out clean with a toothpick. Let cool completely before frosting. For the vanilla buttercream frosting, all of the ingredients are mixed together in a large bowl. Frost each cooled cupcake, and decorate with marshmallows that are cut in half, and each half is dipped in a dish of pink sanding sugar. Place the marshmallows on the cupcakes to look like bunny ears.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Ingredients for Vanilla Buttercream Frosting
- 1/2 cup butter, softened
- 2-3 cups powdered sugar
- 2-4 tablespoons milk
- 1 teaspoon vanilla extract

- pink sanding sugar
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, salt, and baking powder. Add in milk, vegetable oil, eggs, and vanilla extract, and whisk until smooth.
- Evenly divide the cupcake batter between the prepared muffin pan. Bake for 15-18 minutes. Let cool completely before frosting. For the frosting, mix the butter with powdered sugar, vanilla extract, and milk until combined.
- Frost the cooked cupcakes. Place pink sanding sugar into a shallow dish. Cut each marshmallow in half, and dip each half into the sanding sugar. Place them on each cupcake to look like bunny ears.
