Soft and chewy snickerdoodle cookies made to look like the earth. These sweet and delicious classic snickerdoodle cookies make the perfect dessert to bake this earth day. Everyone will love soft and chewy texture and fun design of the cookies.

The cookie dough is started like a classic sugar cookie dough, then it is divided into two bowls, and one bowl is colored green, and the other is colored blue. Take a piece of each color of cookie dough, and roll them into a ball. Roll each cookie dough ball into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Earth Day Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • green food coloring
  • blue food coloring
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Divide the cookie dough into two bowls, color one half of the cookie dough blue, and the other half of the dough green. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Take a piece of both colors of cookie dough, and roll them together into a ball. Roll each ball into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
