Soft and chewy peanut butter cookies with a fun and easy twist for Earth day. And filled with chocolate chips. The cookies are made green and blue with food coloring and rolled in a mixture of granulated sugar and ground cinnamon, giving the cookies a delicious snickerdoodle flavor.
The cookie dough is made similar to a classic peanut butter cookie dough, except that half of the cookie dough is made green and the other half blue. Fold chocolate chips into each cookie dough. Roll a small amount of each cookie dough together into ball and roll in a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.
Earth Day Peanut Butter Chocolate Chip Snickerdoodle Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- green and blue food coloring
- 1 cup chocolate chips, divided
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter, peanut butter, granulated sugar and brown sugar until fluffy.
- Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Divide the cookie dough between two bowls and add green food coloring to one and blue to the other.
- Add 1/2 cup chocolate chips to each bowl. In a shallow dish, combine granulated sugar and ground cinnamon. Take a small amount of cookie dough from each bowl and roll together into balls.
- Roll each cookie in the cinnamon sugar mixture and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
