Earth Day Peanut Butter Chocolate Chip Cookies

Soft and chewy peanut butter cookies for Earth day. The cookies are made blue and green using food coloring, and chocolate chips are folded into the cookie dough. Everyone will love these easy fun cookies this Earth day and the delicious peanut butter and chocolate flavors.

The cookie dough is made like a classic peanut butter cookie dough, then it is divided into two bowls. Green food coloring is mixed into one and blue into the other. Fold chocolate chips into each cookie dough and take a small amount of dough from each and roll together into balls. Place onto a baking sheet and bake until they are fully cooked through.

Earth Day Peanut Butter Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • green and blue food coloring
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter, peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Divide the cookie dough into two bowls, and add green food coloring to one and blue to the other.
  • Fold 1/2 cup chocolate chips into each cookie dough. Take a small amount of each cookie dough and roll together into balls. Place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
