Tender and juicy chicken cooked in the crock-pot will make a delicious dinner with very little prep. A whole chicken is cooked slowly in the crock-pot all day until the chicken is tender can be easily shredded with two forks. No oil or liquid is needed for the chicken, just some spices. You cook this chicken once and you can have dinner for the whole week. You can use the leftover chicken to make different dinners from chicken enchiladas to a chicken casserole just from this one meal.
Before the chicken goes into the crock-pot, it needs to be cleaned and the neck and giblets removed. Place the chicken into the crock-pot and season with a seasoning mixture of brown sugar, salt, pepper, garlic powder and paprika. Sprinkle the seasoning mixture over the chicken, cover and let it cook on high heat for 5-6 hours. The chicken should be done once it is no longer pink and it can easily be shredded with two forks.
