Crock-Pot Italian Pork Roast

The crock-pot is the perfect option to cook roasts, because cooking them in the crock-pot is a lot less hands on. The roast cooks all day in the crock-pot, then by the time it is dinner time you have a fully cooked meal ready to eat. For this roast, I made an Italian pork roast seasoned with Italian herbs such as dried oregano, basil, thyme and sage. The pork roast cooks slowly all day until it is fork tender and juicy.

A three pound pork shoulder or pork loin roast is placed into a large greased crock-pot. Make an Italian seasoning rub with salt, pepper, dried oregano, basil, rosemary, ground thyme, sage and garlic powder. The Italian herbs go great with the pork roast, giving it an Italian flavor. Rub the seasoning mixture over the pork roast and pour chicken broth over the top. The chicken broth helps keep the pork roast from drying out and keeping it juicy. Cover and let the roast cook on low heat for 8 hours or on high heat for 6 hours. Shred or slice the roast and serve it any way that you want, in a sandwich or as it is.

Ingredients
  

  • 1 3 pound pork shoulder or pork loin
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1/2 cup chicken broth

Instructions
 

  • Place pork roast into a large greased crock-pot. In a small bowl, mix together salt, black pepper, oregano, basil, thyme, sage, rosemary, and garlic powder.
  • Evenly sprinkle the seasoning mixture over the pork roast. Pour chicken broth over the top. Cover and cook on low for 8 hours, or on high heat for 6 hours.
