All of the ingredients are placed into the crock-pot and cook over low heat all day, until the chicken is juicy and tender. These fajitas make a great taco night alternative, served with chips and salsa.
These crock-pot chicken fajitas are so tender and delicious. There is very little prep work involved in making these fajitas. All of the ingredients are added to a large greased crock-pot, and allowed to cook on low for 8 hours, or on high heat for 4-5 hours. Once the chicken is tender, shred the chicken with two forks and mix the other ingredients. Serve on tortillas topped with more salsa.
Crock-Pot Chicken Fajitas
Ingredients
- 1 pound chicken
- 1 teaspoon salt
- 1 teaspoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 large onion, sliced
- 3 large bell peppers, sliced
- 1/2 cup salsa
Instructions
- In a small bowl, combine seasonings. Place chicken into a large greased crock-pot. Sprinkle with seasoning mixture. Add in onion, peppers, and salsa. Cover and let cook on low for 8 hours.
- Shred chicken, serve on tortillas.
