Crock-Pot Chicken Fajitas

Easy homemade chicken fajitas cooked in the crock-pot with onion and bell pepper slices. The chicken is seasoned with a mixture of spices to create a delicious spicy chicken. All of the ingredients are placed into the crock-pot and cook over low heat all day, until the chicken is juicy and tender. These fajitas make a great taco night alternative, served with chips and salsa.

These crock-pot chicken fajitas are so tender and delicious. There is very little prep work involved in making these fajitas. All of the ingredients are added to a large greased crock-pot, and allowed to cook on low for 8 hours, or on high heat for 4-5 hours. Once the chicken is tender, shred the chicken with two forks and mix the other ingredients. Serve on tortillas topped with more salsa.

Ingredients
  

  • 1 pound chicken
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 large onion, sliced
  • 3 large bell peppers, sliced
  • 1/2 cup salsa

Instructions
 

  • In a small bowl, combine seasonings. Place chicken into a large greased crock-pot. Sprinkle with seasoning mixture. Add in onion, peppers, and salsa. Cover and let cook on low for 8 hours.
  • Shred chicken, serve on tortillas.
