Crock-Pot Black Eyed Peas

I made these black eyed peas for new years dinner last week. Because black eyed peas are used for traditional new years dinners because they are considered good luck. Bacon is also added to the black eyed peas because pork is considered good luck as well. The easiest way to cook dry uncooked black eyed peas is in the crock-pot. All you need to do is put all of the ingredients into the crock-pot together in the morning and let them slow-cook all day until the peas are tender. I served these peas with all of the traditional good luck foods, pork roast, cornbread and collared greens.

The black eyed peas need to be prepared the night before by soaking them in a bowl of water. Cover the black eyed peas and place them into the fridge overnight. When you are ready to cook the black eyed peas, drain the water from them and dump them into a large crock-pot. Cover the black eyed peas with either chicken broth or water. Add in cooked and crumbled bacon and your choice of seasonings. For the seasonings, I used salt, chili powder, ground cumin and red pepper flakes. Because I prefer a more spicy flavor for these black eyed peas. Let the peas cook in the crock-pot on low heat for 6-8 hours, or on high heat for 3-4 hours. The black eyed peas should be tender and most of the liquid should be absorbed.

Ingredients
  

  • 1 pound dry black eyed peas
  • 4 cups chicken broth or water
  • 6 slices cooked bacon, crumbled
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes

Instructions
 

  • Rinse back eyed peas and cover with water. Let the black eyed peas soak in the water in the fridge overnight.
  • Drain water from the black eyed peas and place into a large crock-pot. Pour in chicken broth or water, cooked and crumbled bacon, salt, chili powder, ground cumin and red pepper flakes. Cover and let cook on low for 6-8 hour, or on high heat for 3-4 hours.
