Beef stew is the perfect comfort food meal to enjoy this time of the year. This beef stew is made even easier by making it in a crock-pot. The stew slow cooks all day, then by dinner you have a warm hearty meal with little work. This classic stew is made with carrots, potatoes and celery, all cooked together. Serve warm with bread or cornbread for a hearty meal on a cold day.

The beef stew is first coated in flour and browned lightly in a large skillet. Not to cook the meat all the way through, just to brown it. If you are short on time, you can also skip this step and the stew will still taste great. After the meat is browned, it is added to a large greased crock-pot along with carrots, potatoes and celery. Season the stew with salt, pepper, garlic powder, paprika and dried oregano. Pour in beef broth and let the stew cook on low heat for 6-8 hours on high heat for 3-4 hours.

Ingredients
  

  • 2 pounds beef stew meat
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 pound carrots, peeled and sliced
  • 2 pounds russet potatoes, peeled and cubed
  • 3 stalks celery, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon dried oregano
  • 2 cups beef broth

Instructions
 

  • Coat beef in flour. heat olive oil in a large skillet over medium heat. Cook meat until lightly browned. Place meat into a large greased crock-pot.
  • Add in carrots, potatoes and celery. Season with salt, pepper, garlic powder, paprika and dried oregano. Pour in beef broth. Cover and let cook on low for 6-8 hours or on high heat for 4-5 hours.
